Dry the beans
Spread the drained black beans on a lined baking sheet and bake at 190°C (375°F) for 12 minutes. This drying step is the secret to burgers that hold together instead of turning mushy. Let cool slightly.
Mash, do not puree
Tip the beans into a bowl and mash with a fork or potato masher until mostly broken down but still chunky — you want texture, not hummus.
Mix the patties
Add the quinoa, oats, bell pepper, onion, egg, tomato paste, spices, olive oil, 1 teaspoon salt and pepper. Mix well, then rest 10 minutes so the oats hydrate and bind. Divide into 4 thick patties and chill 15 minutes if you have time — cold patties hold better.
Crisp them up
Heat a film of oil in a skillet over medium heat. Cook the patties 5–6 minutes per side until deeply browned and crisp at the edges. Do not press them — pressing squeezes out moisture.
Build the burgers
Toast the buns cut-side down in the same pan. Stack with lettuce, tomato, onion and sauce. These are substantial — bring napkins.
