  1. Roast the squash

    Heat the oven to 220°C (425°F). Toss the squash cubes with 1 tablespoon of the olive oil, the cumin, smoked paprika, half the salt and the black pepper. Spread on a large rimmed sheet pan in a single layer with space between the cubes. Roast 25 to 30 minutes, flipping once halfway, until browned at the edges and a knife slides in easily.

  2. Cook the quinoa

    While the squash roasts, combine the rinsed quinoa with 325 ml water and a pinch of salt in a saucepan. Bring to a boil, cover, and simmer on low for 15 minutes. Take off the heat, rest 5 minutes covered, then fluff with a fork.

  3. Crisp the chickpeas

    Pat the chickpeas very dry with a clean towel. When the tray goes into the oven, scatter the chickpeas in a single layer around the squash (they share the tray), drizzle with the remaining olive oil and sprinkle with a pinch of salt. If the tray looks crowded, use a second tray — the chickpeas need space to crisp. Roast 25 to 30 minutes, tossing everything once halfway, until the chickpeas are crisp-edged and golden. In the last 2 minutes, toss the minced garlic over the hot chickpeas so it mellows in the residual heat.

  4. Massage the kale, whisk the dressing

    Put the kale in a large bowl with the remaining salt and half the lemon juice. Scrunch with your hands for about 30 seconds until it darkens and softens. In a small bowl, whisk the tahini, maple syrup, remaining lemon juice, grated garlic and 3 to 4 tablespoons of warm water until pourable. It often seizes into a stiff paste first; keep whisking and it usually smooths out.

  5. Assemble

    Divide the quinoa among 4 bowls. Top with the roasted squash and crispy chickpeas, then the massaged kale. Drizzle generously with the maple-tahini dressing and scatter the pumpkin seeds over everything. Serve warm.

Do I have to rinse the quinoa?
Yes, and it takes 30 seconds. Quinoa's outer coating (saponin) tastes bitter and soapy if you skip the rinse. Rinse under cold water in a fine-mesh sieve until the water runs clear.
Can I buy pre-cut squash to save time?
Yes. An 800 g bag of pre-cut butternut works. The cubes are often larger, so give them about 5 extra minutes and check that a knife slides in easily.
How do I get the chickpeas actually crispy?
