  1. Sear the shrimp

    Pat the shrimp very dry — this is non-negotiable for a good sear. Heat 1 tablespoon of oil in a large skillet over high heat. Sear the shrimp 90 seconds per side until pink and just opaque. Remove immediately; they finish in the residual heat.

  2. Bloom the garlic

    Lower the heat to medium, add the remaining oil, garlic slices and chili flakes. Cook 1 minute, stirring, until the garlic is pale gold and fragrant — not brown, which turns bitter.

  3. Wilt the tomatoes

    Add the cherry tomatoes with a pinch of salt and cook 3 minutes until they slump and release their juices into a light pan sauce.

  4. Toss the noodles

    Add the zucchini noodles and toss 2–3 minutes until just tender with a slight bite. They release water as they cook — do not cover the pan, and do not overcook or you get soup.

  5. Finish

    Return the shrimp to the pan, add lemon juice and parmesan, and toss 30 seconds. Serve immediately with basil and lemon wedges.
