  1. Build the base

    Heat the oil in a large pot over medium heat. Add onion, carrot and celery with a pinch of salt and cook 8 minutes, stirring, until soft and sweet. Stir in the garlic, tomato paste and oregano and cook 2 minutes until the paste darkens — this caramelization is where the meaty depth comes from.

  2. Simmer the lentils

    Add the lentils, chopped tomatoes and stock. Bring to a boil, then reduce to a gentle simmer. Cook 20–22 minutes, stirring occasionally, until the lentils collapse into a thick, ragged sauce. If it gets too thick, loosen with splashes of water.

  3. Cook the pasta

    While the sauce simmers, cook the spaghetti in well-salted water until al dente. Reserve a cup of pasta water before draining.

  4. Bring it together

    Season the sauce boldly with salt, pepper and chili flakes. Toss the pasta through the sauce with splashes of pasta water until every strand is coated and glossy. Serve with parmesan and basil.
