Sear the mushrooms
Heat the olive oil in a 25 cm oven-safe skillet over medium-high heat. Sear the mushrooms undisturbed for 3-4 minutes until deeply browned. Don't salt them yet, or they'll steam.
Soften onion, wilt spinach
Add the onion and a pinch of salt; cook 3 minutes. Add the garlic and spinach and cook 2 minutes until the spinach wilts and any liquid evaporates.
Whisk the eggs
Whisk the eggs with the milk, half the parmesan, salt, pepper and thyme. Pour over the vegetables and tilt the pan so the egg reaches the edges. Cook on the stove 2-3 minutes until the edges just set.
Bake
Transfer to a 190°C / 375°F oven and bake 12-15 minutes until the top is golden and the center barely jiggles. Scatter over the remaining parmesan for the last 3 minutes.
Rest and slice
Rest 5 minutes; it finishes setting off the heat. Slice into wedges and serve warm, at room temperature, or cold straight from the fridge.
