Ingredients
Instructions
4 steps · about 20 minutes total
Toast the seeds
Toast the pumpkin seeds in a dry skillet for 3-4 minutes until they pop and smell nutty. Let cool slightly. This one step doubles their flavor.
Mix everything
Stir the peanut butter, honey, vanilla, cinnamon and salt until smooth. Fold in the oats, toasted pumpkin seeds, chia and chocolate chips until every bit is coated.
Chill the mixture
Refrigerate the bowl for 20-30 minutes. Cold mixture rolls cleanly; warm mixture sticks to your hands and falls apart.
Roll and store
Roll into 16 balls (about a tablespoon each). Refrigerate in an airtight container. They firm up fully in an hour and keep for a week.
Why this helps
Magnesium and zinc in a snack
Afternoon snacking is where most diets quietly fall apart. These bites redirect it: pumpkin seeds deliver magnesium and zinc (two minerals most people undereat) inside a chewy, chocolate-flecked package you'll actually reach for. The protein and fat mean two bites genuinely tide you over to dinner.
