  1. Dry the chickpeas

    This step makes or breaks the crunch. Drain the chickpeas, spread on a clean kitchen towel and rub dry, then air-dry 15 minutes (or pat very thoroughly). Any surface moisture steams instead of crisps. Remove any loose skins.

  2. Season

    Toss the dry chickpeas, pumpkin seeds and almonds with the olive oil, all the spices and salt until evenly coated.

  3. Roast low and slow

    Spread in a single layer on a lined baking sheet — crowding is the enemy of crisp. Roast at 180°C (350°F) for 22–28 minutes, shaking the pan twice, until the chickpeas are golden, shrunken and rattle when shaken. They crisp further as they cool.

  4. Cool completely

    Cool fully on the pan before storing — even slight warmth creates condensation and kills the crunch. Taste for salt once cool; flavors mute slightly as they cool.

Why are my chickpeas not crispy?
Moisture is almost always the cause — they were not dried enough, the pan was crowded, or they were stored before cooling fully. They also need the full roasting time; pale chickpeas are steamed chickpeas.
How long do they stay crispy?
3–4 days in an airtight container at room temperature. Any longer and they soften — refresh 5 minutes in a hot oven to bring back the crunch.
Can I use dried chickpeas?
Yes — soak overnight and cook until just tender (not mushy), then dry very well. It is more work but the texture is superb.
What other spice blends work?
Ranch (dill + garlic + onion powder), curry powder, za’atar, or cinnamon-sugar for a sweet version. The formula is endlessly riffable.
Are they actually healthy?
