  1. Smash the avocado

    Scoop the avocado into a bowl with the lemon juice, olive oil, a pinch of flaky salt and pepper. Smash roughly with a fork — chunky, not pureed.

  2. Toast the bread

    Toast the whole-grain bread until deeply golden and crisp enough to hold toppings without bending.

  3. Assemble

    Spread the avocado thickly on the toast. Lay the sardines over the top — whole fillets look great — then scatter with red onion.

  4. Finish

    Drizzle with a little more olive oil, shower with chili flakes, parsley and flaky salt. Eat immediately, with lemon wedges for squeezing.
