Start the oats
Bring the water or stock to a boil with a pinch of salt. Stir in the oats, reduce to a gentle simmer and cook 8–10 minutes, stirring occasionally, until creamy. Stock instead of water is the savory-oatmeal secret.
Sear the mushrooms
Meanwhile, heat 1 tablespoon of oil in a skillet over high heat. Add the mushrooms in a single layer and do not touch them for 3 minutes — this browning is where all the flavor lives. Stir, add garlic and soy sauce, and cook 2 more minutes.
Wilt the spinach
Push the mushrooms aside, add the spinach with a splash of water, and toss until just wilted, about 1 minute. Season everything with pepper.
Fry the eggs
In the same skillet with the remaining oil, fry the eggs to your liking — jammy yolks (about 3 minutes covered) are perfect here.
Bowl it up
Stir the parmesan through the oats until melty. Divide between bowls, top with mushrooms, spinach and a fried egg each. Finish with extra parmesan, chili flakes and spring onion.
