Start the rice
Get the rice going first. Brown rice needs 40 minutes, white about 15. Time the rest of the recipe around it.
Roast the sweet potato
Toss the sweet potato cubes with 2 tbsp olive oil, cumin, smoked paprika, salt and pepper. Roast at 220°C / 425°F for 25-30 minutes, flipping once, until caramelized and crisp at the edges.
Warm the beans and greens
In a skillet with the remaining oil, warm the black beans with a splash of water for 3 minutes. Add the kale or spinach and cook 2-3 minutes until just wilted. Season well.
Make the tahini drizzle
Whisk the tahini, lemon juice, grated garlic, a pinch of salt and 3-4 tbsp warm water until pourable. It seizes before it smooths, so keep whisking.
Assemble
Divide the rice among bowls, top with the roasted sweet potato and the bean-greens mixture, and drizzle generously with tahini. Finish with chili flakes if you like heat.
