Instructions

5 steps · about 55 minutes total

  1. Heat the oven

Preheat oven to 375°F (190°C). Lightly grease a 9x9-inch baking dish.

  2. Toss the filling

In a large bowl, toss the apple slices with maple syrup, lemon juice, cornstarch, cinnamon, and nutmeg until every slice is coated. Spread evenly in the dish.

  3. Mix the topping

In the same bowl, combine oats, almond flour, walnuts, ground flaxseed, cinnamon, and salt. Stir in the maple syrup and melted coconut oil until crumbly clusters form.

  4. Assemble and bake

Scatter the topping evenly over the apples. Bake 35-40 minutes, until the topping is deep golden and the filling bubbles at the edges.

  5. Rest and serve

Rest 10 minutes so the filling sets. Serve warm, plain or with a spoonful of Greek yogurt.

Why this helps

fiber

Recipe method developed in-house for The Recipe Seeker, informed by the oat-nut-maple crisp structures published by Columbus Community Hospital's diabetes education program and Aultman Health. Skin-on apples, oats, walnuts, almond flour, and ground flaxseed stack to 6.7g fiber per serving with no refined sugar. Nutrition calculated from USDA FoodData Central ingredient data — apple energy and vitamin C use USDA standard reference values (52 kcal / 4.6 mg per 100g), since the FDC search record omits those rows.

Questions, answered

How much fiber is in each serving?
About 6.7g per serving (24% of the daily value), calculated from USDA FoodData Central ingredient data for skin-on apples, oats, almond flour, walnuts, and ground flaxseed. Keeping the apple skin on adds roughly 0.8g fiber per serving.
Can I peel the apples?
Yes — the crisp still works, but you lose about 0.8g fiber per serving. Thin-skinned varieties like Gala or Fuji barely register once baked, so keep them on if you can.
Is this apple crisp gluten-free?
It can be: use certified gluten-free rolled oats. Almond flour, walnuts, flaxseed, and the remaining ingredients are naturally gluten-free.
Can I use butter instead of coconut oil?
Yes — swap in the same amount of melted butter. The topping tastes slightly richer; the fiber numbers barely change.
How do I store leftovers?
Cover and refrigerate up to 4 days. Reheat individual portions in a 350°F (175°C) oven for 10 minutes to re-crisp the topping; the microwave makes it soft.
Can I cut back on the sugar?
Reduce the maple syrup to 3 Tbsp total (1 Tbsp in the filling, 2 in the topping). Sweet-tart apples like Honeycrisp carry the flavor, and the fiber count stays the same.
